Possible mis-information, loadcells are unusual on modern high resolution electronic balances, interestingly the term balance is a good description of the mechanism.
The most common device is an electromagnet which "balances" the applied load via a position sensor, the coil current is proportional to the load, it is easy to measure the current very precisely and the position can be held to extremely small tolerances, nett effect is a very high resolution and repeatability.
