If you want only a water level detector, three terminal peizo buzzer is simplest.
Put trigger terminal and +ve supply with suitable lengths of wires at the water level to be detected. Scrap the wires a bit.
Power the buzzer. When the water level reaches the terminals, the buzzer sounds.
I was using this for muncipal water supply indication and overhead tank high level indication
