I suggest that your 8 electrodes be placed beside a flat plate, so the capacitance is to the flat plate, which will be common, or ground. If the electrodes are at different levels, an 8 bit digital code can be generated. Then you need a binary to BCD to 7-segment conversion to drive the display. I think that requires a computer & program. You can find binary to BCD algorithims on the web.
