The clumps should be avoided as Hairy says, particularly when your having sausages. It's best to wash your hands off first before applying any moistness enhancer. There is usually some natural liquid which can harm the sausage if it comes into contact with the wrong kind of lube. All to often I see mistakes like this being made, in films as well as in person. Despite the taste I really advise against biting into sausages without the preoper protection.
